A generous breakfast is included in the room tariff and is served in the salle à petit déjeuner or on the terrace, weather permitting. The room is the perfect place to start the day catching the full sun. Pictures of Carcassonne and the surrounding region adorn the walls. Guests are treated to home-made jams, cereals, pastries, bread, cheese, and fruit (in season). The owners are excellent chefs and offer guests a four course table d’Hôtes menu, including wine, in the evening 3 times a week on a Monday, Wednesday and Friday. Cuisine reflects regional specialities, the flavours of the South and is seasonal and fresh. House specialities include Languedoc daube of beef, fresh fig tart, local melons filled with Muscat wine and goats' cheese with mountain honey.
This is served around a large table in the Domaine’s panelled salle à manger or on the terrace, weather permitting. The cuisine incorporates local produce and reflects the tastes of the Languedoc. Guests are offered a choice of excellent house wines, sourced locally.
A vegetarian alternative is always offered given prior notification and other dietary choices can be accommodated given prior notice.
